Ingredients 

Main Ingredients

  • 1 sheet vegan puff pastry
  • 1 medium butternut squash peeled and sliced
  • 2 tablespoon olive oil
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 1 tablespoon fresh sage chopped
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry on a baking sheet.
  3. Toss butternut squash slices with 1 tablespoon olive oil, salt, and pepper.
  4. Spread squash over the puff pastry.
  5. In a pan, heat 1 tablespoon olive oil and sauté onion until translucent.
  6. Add garlic and sage, cook for another minute.
  7. Spread onion mixture over the squash.
  8. Bake for 30-40 minutes until pastry is golden and squash is tender.
