- 1 sheet vegan puff pastry
- 1 medium butternut squash peeled and sliced
- 2 tablespoon olive oil
- 1 onion thinly sliced
- 2 cloves garlic minced
- 1 tablespoon fresh sage chopped
- to taste Salt and pepper
Preheat oven to 400°F (200°C).
Roll out the puff pastry on a baking sheet.
Toss butternut squash slices with 1 tablespoon olive oil, salt, and pepper.
Spread squash over the puff pastry.
In a pan, heat 1 tablespoon olive oil and sauté onion until translucent.
Add garlic and sage, cook for another minute.
Spread onion mixture over the squash.
Bake for 30-40 minutes until pastry is golden and squash is tender.
