  • 1 medium Butternut Squash peeled, seeded, and cubed
  • 1 cup Vegetable Broth
  • 1 clove Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat.
  2. 2. Add minced garlic and sauté until fragrant.
  3. 3. Add cubed butternut squash and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer until squash is tender, about 20 minutes.
  5. 5. Transfer mixture to a blender and blend until smooth.
  6. 6. Season with salt and black pepper to taste.
