Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt
- ½ teaspoon black pepper
1. In a large pot, sauté the onion and garlic until soft.
2. Add the butternut squash and vegetable broth. Bring to a boil, then simmer until squash is tender.
3. Blend the soup until smooth.
4. Stir in the coconut milk, salt, and pepper. Heat through and serve.
