Butternut Squash Stew Recipe

Main Ingredients
- 1 medium Butternut Squash peeled and cubed
- 1 large Onion diced
- 3 cloves Garlic minced
- 2 cups Vegetable Broth
- 1 can Diced Tomatoes 14.5 oz can
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Paprika
- 1 can Chickpeas 15 oz can, drained and rinsed
- to taste Salt and Pepper
- 2 tablespoon Olive Oil
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Stir in the cubed butternut squash, ground cumin, ground coriander, and paprika. Cook for 5 minutes.
5. Add the vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the squash is tender.
6. Add the chickpeas and cook for another 5 minutes. Season with salt and pepper to taste.
7. Serve hot and enjoy!
