  • 1 small head cabbage shredded
  • 1 carrot carrot grated
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • to taste salt
  • to taste pepper

Instructions 

  1. In a large bowl, combine the shredded cabbage, grated carrot, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss to coat.
