Dressing
- ½ cup Raw Cashews soaked in water for 2 hours
- ¼ cup Water
- 2 tablespoon Lemon Juice freshly squeezed
- 1 tablespoon Dijon Mustard
- 1 tablespoon Nutritional Yeast
- 1 clove Garlic minced
- 1 teaspoon Capers drained
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper freshly ground
Salad
- 1 head Romaine Lettuce chopped
- 1 cup Croutons vegan
- ¼ cup Vegan Parmesan Cheese grated
1. Drain and rinse the soaked cashews.
2. In a blender, combine all dressing ingredients and blend until smooth.
3. In a large bowl, combine the chopped romaine lettuce, croutons, and vegan Parmesan cheese.
4. Pour the dressing over the salad and toss to coat evenly.
5. Serve immediately and enjoy!
