Ingredients 

Dressing

  • ½ cup Raw Cashews soaked in water for 2 hours
  • ¼ cup Water
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Nutritional Yeast
  • 1 clove Garlic minced
  • 1 teaspoon Capers drained
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper freshly ground

Salad

  • 1 head Romaine Lettuce chopped
  • 1 cup Croutons vegan
  • ¼ cup Vegan Parmesan Cheese grated

Instructions 

  1. 1. Drain and rinse the soaked cashews.
  2. 2. In a blender, combine all dressing ingredients and blend until smooth.
  3. 3. In a large bowl, combine the chopped romaine lettuce, croutons, and vegan Parmesan cheese.
  4. 4. Pour the dressing over the salad and toss to coat evenly.
  5. 5. Serve immediately and enjoy!
