Ingredients 

Main Ingredients

  • 1 cup black-eyed peas soaked overnight
  • 1 cup rice
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, bell pepper, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Stir in Cajun seasoning, salt, and pepper.
  5. Add soaked black-eyed peas, rice, diced tomatoes, and vegetable broth.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes or until peas and rice are tender.
  7. Adjust seasoning if needed and serve hot.
