Cajun Black-Eyed Peas and Rice Recipe

- 1 cup black-eyed peas soaked overnight
- 1 cup rice
- 1 onion chopped
- 1 bell pepper chopped
- 2 stalks celery chopped
- 3 cloves garlic minced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 2 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
Heat olive oil in a pot over medium heat.
Add onion, bell pepper, and celery. Cook until softened.
Add garlic and cook for another minute.
Stir in Cajun seasoning, salt, and pepper.
Add soaked black-eyed peas, rice, diced tomatoes, and vegetable broth.
Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes or until peas and rice are tender.
Adjust seasoning if needed and serve hot.
