Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • 1 cup Onion chopped
  • 1 cup Green Bell Pepper chopped
  • 1 cup Celery chopped
  • 3 cloves Garlic minced
  • ½ cup Vegetable Oil
  • ½ cup All-Purpose Flour
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 1 teaspoon Dried Thyme
  • 2 pcs Bay Leaves
  • 1 cup Okra sliced
  • to taste Salt
  • to taste Black Pepper
  • 4 cups Cooked White Rice for serving

Instructions 

  1. 1. In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux. Cook, stirring constantly, until the roux is a dark brown color, about 15-20 minutes.
  2. 2. Add the chopped onion, bell pepper, and celery to the roux. Cook until the vegetables are tender, about 5 minutes. Add the garlic and cook for another minute.
  3. 3. Slowly stir in the chicken broth, making sure there are no lumps. Add the Cajun seasoning, thyme, and bay leaves. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  4. 4. Add the chicken and sausage to the pot. Simmer until the chicken is cooked through, about 20 minutes. Add the okra and cook for another 10 minutes.
  5. 5. Season with salt and black pepper to taste. Serve the gumbo over cooked white rice.
