Ingredients

  • 1 cup rice
  • 1 can black beans drained and rinsed
  • 1 bell pepper chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

Instructions 

  1. Cook rice according to package instructions.
  2. In a large pan, heat olive oil over medium heat.
  3. Add onion and bell pepper, sauté until soft.
  4. Add garlic and cook for another minute.
  5. Stir in black beans, cooked rice, vegetable broth, and Cajun seasoning.
  6. Cook until heated through, about 5-7 minutes.
  7. Season with salt and pepper to taste.
