Ingredients 

Main Ingredients

  • 2 lbs Beef shank cut into chunks
  • 1 cup Carrots sliced
  • 2 ears Corn cut into chunks
  • 2 cups Potatoes cubed
  • 1 cup Green beans trimmed
  • 1 medium Onion quartered
  • 2 cloves Garlic minced
  • 8 cups Water
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 bunch Cilantro chopped

Instructions 

  1. 1. In a large pot, add the beef shank and water. Bring to a boil, then reduce to a simmer and cook for about 1 hour.
  2. 2. Skim off any foam that rises to the top.
  3. 3. Add the onion, garlic, salt, and pepper. Continue to simmer for another 30 minutes.
  4. 4. Add the carrots, corn, potatoes, and green beans. Cook until vegetables are tender, about 30 minutes more.
  5. 5. Adjust seasoning with more salt and pepper if needed. Garnish with chopped cilantro before serving.
