Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, chopped
- 1 cup Corn Kernels
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 1 can Diced Tomatoes
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Cilantro, chopped optional
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add chopped red bell pepper and corn kernels. Cook for 5 minutes.
Add black beans, kidney beans, and diced tomatoes. Stir well.
Season with ground cumin, chili powder, salt, and black pepper. Stir to combine.
Simmer for 15 minutes, stirring occasionally.
Garnish with fresh cilantro before serving, if desired.
