Ingredients 

Main Ingredients

  • 1 large Zucchini sliced
  • 1 large Red Bell Pepper sliced
  • 1 large Yellow Bell Pepper sliced
  • 1 medium Red Onion sliced
  • 4 pieces Ciabatta Bread halved
  • 2 tablespoons Olive Oil
  • 1 cup Hummus
  • 1 cup Baby Spinach

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini, bell peppers, and onion slices with olive oil.
  3. Grill the vegetables for about 4-5 minutes on each side until tender and slightly charred.
  4. Toast the ciabatta bread on the grill for about 1-2 minutes until lightly browned.
  5. Spread hummus on the bottom half of each ciabatta piece.
  6. Layer the grilled vegetables and baby spinach on top of the hummus.
  7. Top with the other half of the ciabatta bread and serve immediately.
