Ingredients 

Main Ingredients

  • 2 cups Bell Peppers, chopped
  • 2 cups Zucchini, sliced
  • 1 cup Cherry Tomatoes, halved
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder

Instructions 

  1. 1. Preheat your campfire or grill to medium heat.
  2. 2. In a large bowl, combine all the vegetables.
  3. 3. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat evenly.
  4. 4. Divide the vegetable mixture onto large sheets of aluminum foil. Fold the foil over the veggies and seal the edges to make packets.
  5. 5. Place the foil packets on the grill or over the campfire. Cook for about 20 minutes, turning occasionally, until the veggies are tender.
  6. 6. Carefully open the foil packets and serve hot.
