Ingredients 

Main Ingredients

  • 1 large eggplant, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • ¼ cup capers, drained
  • ½ cup green olives, pitted and sliced
  • ¼ cup red wine vinegar
  • 2 tablespoon sugar
  • 1 can diced tomatoes 14 oz
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add eggplant and cook until softened, about 10 minutes.
  3. Add bell peppers, onion, and celery. Cook until vegetables are tender, about 10 minutes.
  4. Stir in garlic, capers, olives, vinegar, sugar, and tomatoes. Simmer for 10 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh basil before serving.
