Ingredients 

Main Ingredients

  • 8 oz pasta any short pasta like penne or fusilli
  • 1 cup cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 cup vegan mozzarella cubed
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Instructions 

  1. Cook the pasta according to the package instructions. Drain and let it cool.
  2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, basil, and vegan mozzarella.
  3. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
  4. Toss everything together until well combined. Serve immediately or chill in the fridge for later.
