Ingredients

  • 4 large tomatoes sliced
  • 1 cup fresh basil leaves
  • 1 cup vegan mozzarella sliced
  • ½ cup balsamic vinegar
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. In a small saucepan, bring the balsamic vinegar to a boil. Reduce heat and simmer until it has reduced by half and has a syrupy consistency. Let it cool.
  2. 2. Arrange tomato slices, basil leaves, and vegan mozzarella slices on a serving platter, alternating and overlapping them.
  3. 3. Drizzle olive oil over the salad, then drizzle the balsamic glaze. Season with salt and pepper to taste.
  4. 4. Serve immediately and enjoy!
