Caprese Salad with Balsamic Glaze

Main Ingredients
- 4 large tomatoes sliced
- 1 cup fresh basil leaves
- 1 cup vegan mozzarella sliced
- ½ cup balsamic vinegar
- 2 tablespoon olive oil
- to taste salt and pepper
1. In a small saucepan, bring the balsamic vinegar to a boil. Reduce heat and simmer until it has reduced by half and has a syrupy consistency. Let it cool.
2. Arrange tomato slices, basil leaves, and vegan mozzarella slices on a serving platter, alternating and overlapping them.
3. Drizzle olive oil over the salad, then drizzle the balsamic glaze. Season with salt and pepper to taste.
4. Serve immediately and enjoy!
