Caribbean Sweet Potato and Black Bean Stew

- 2 medium sweet potatoes peeled and diced
- 1 can black beans drained and rinsed
- 1 medium onion diced
- 3 cloves garlic minced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
- 1 tablespoon olive oil
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the diced sweet potatoes, black beans, diced tomatoes, and vegetable broth to the pot.
Stir in the ground cumin, ground coriander, smoked paprika, salt, and black pepper.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender.
Adjust seasoning to taste and serve hot.
