Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 lb Carrots, peeled and chopped
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until softened.
  3. 3. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  4. 4. Remove from heat and let cool slightly. Transfer to a blender and blend until smooth.
  5. 5. Return the soup to the pot. Stir in the coconut milk and heat through. Season with salt and pepper to taste.
  6. 6. Serve hot and enjoy!
