- 1 cup Grated Carrots
- 1 cup Grated Apples
- 1.5 cups All-Purpose Flour
- 1 cup Sugar
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 0.5 teaspoon Nutmeg
- 0.5 cup Vegetable Oil
- 1 teaspoon Vanilla Extract
- 0.5 cup Chopped Walnuts optional
Preheat your oven to 350°F (175°C). Grease a baking pan.
In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and nutmeg.
Add the grated carrots and apples to the dry ingredients and mix well.
In a separate bowl, combine the vegetable oil and vanilla extract. Pour this mixture into the carrot and apple mixture and stir until just combined.
If using, fold in the chopped walnuts.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
