Ingredients

  • 2 cups grated carrots
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • ½ cup maple syrup
  • ½ cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine grated carrots, whole wheat flour, rolled oats, maple syrup, and melted coconut oil.
  3. Add baking powder, ground cinnamon, ground nutmeg, and salt. Mix well.
  4. Pour the mixture into the prepared baking pan and spread evenly.
  5. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let it cool before cutting into bars. Enjoy!
