  • 1 cup grated carrots
  • 1 cup rolled oats
  • 1 cup almond flour
  • 0.5 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, oats, and almond flour.
  3. Add maple syrup, melted coconut oil, and vanilla extract. Stir well.
  4. Mix in cinnamon, baking soda, and salt.
  5. Scoop dough onto a baking sheet.
  6. Bake for 12 minutes or until golden brown.
  7. Let cool before serving.
