Ingredients 

Base

  • 1 cup Almond Flour
  • ¼ cup Coconut Oil melted
  • 2 tablespoon Maple Syrup

Filling

  • 1 ½ cups Raw Cashews soaked overnight
  • 1 cup Carrot grated
  • ½ cup Coconut Cream
  • ¼ cup Maple Syrup
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted coconut oil, and maple syrup. Press into the bottom of a lined baking pan.
  3. Bake the base for 10 minutes, then let it cool.
  4. In a blender, combine soaked cashews, grated carrot, coconut cream, maple syrup, lemon juice, vanilla extract, cinnamon, and nutmeg. Blend until smooth.
  5. Pour the filling over the cooled base and spread evenly.
  6. Bake for 30 minutes, then let it cool completely before slicing into bars.
