Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 4 cups Carrots, chopped
  • 1 tablespoon Ginger, grated
  • 4 cups Vegetable Broth
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the chopped carrots and grated ginger. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, until carrots are tender.
  5. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
