Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 4 cups Carrots peeled and chopped
  • 1 tablespoon Fresh Ginger grated
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Add carrots and ginger, cook for another 5 minutes.
  4. 4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until carrots are tender.
  5. 5. Remove from heat and let cool slightly. Blend the soup in batches until smooth.
  6. 6. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
