Ingredients

  • 1 cup red lentils
  • 4 cups carrots, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 6 cups vegetable broth
  • to taste salt and pepper

Instructions 

  1. 1. Rinse the lentils under cold water.
  2. 2. In a large pot, sauté the onion and garlic until soft.
  3. 3. Add the carrots, cumin, and coriander. Cook for a few minutes.
  4. 4. Add the lentils and vegetable broth. Bring to a boil, then simmer for 20-25 minutes.
  5. 5. Blend the soup until smooth. Season with salt and pepper to taste.
