Carrot Salad Recipe
A simple and refreshing vegan carrot salad.

Main Ingredients
- 4 large carrots, grated
- ¼ cup raisins
- ¼ cup chopped fresh parsley
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Grate the carrots into a large bowl.
Add the raisins and chopped parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the carrot mixture and toss to combine.
Serve immediately or refrigerate for later.
