Carrot Soup Recipe
A simple, delicious vegan carrot soup.

Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 cups carrots, chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat the olive oil in a pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the chopped carrots and cook for a few more minutes.
4. Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cook until the carrots are tender, about 20 minutes.
5. Use a blender to puree the soup until smooth.
6. Stir in the ground cumin, salt, and black pepper. Adjust seasoning to taste.
7. Serve hot.
