Ingredients 

Main Ingredients

  • 2 pieces Steak (ribeye or sirloin) about 1 inch thick
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper freshly ground
  • 2 cloves Garlic smashed
  • 2 sprigs Fresh rosemary or thyme

Instructions 

  1. 1. Take the steaks out of the fridge and let them come to room temperature for about 30 minutes.
  2. 2. Preheat your cast iron skillet over high heat until it's smoking hot.
  3. 3. Pat the steaks dry with paper towels and season generously with salt and freshly ground black pepper.
  4. 4. Add the olive oil to the skillet. Place the steaks in the skillet and sear for 2-3 minutes on each side.
  5. 5. Add the garlic and rosemary or thyme to the skillet. Tilt the skillet and use a spoon to baste the steaks with the oil and juices.
  6. 6. Continue cooking until the steaks reach your desired level of doneness (use a meat thermometer to check).
  7. 7. Remove the steaks from the skillet and let them rest for 5 minutes before serving.
