  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 cup Chickpeas cooked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Cook quinoa in vegetable broth according to package instructions.
  2. 2. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, and cucumber.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
  4. 4. Toss everything together until well combined. Serve immediately or chill in the fridge for later.
