Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 cup Red Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 4 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until softened.
  3. 3. Add the cauliflower florets, red lentils, cumin, and turmeric. Stir to combine.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes, until the cauliflower and lentils are tender.
  5. 5. Use a blender to puree the soup until smooth. Season with salt and black pepper to taste.
  6. 6. Serve hot and enjoy!
