Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped
  • 2 medium Potatoes peeled and diced
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until translucent.
  2. 2. Add the chopped cauliflower and diced potatoes to the pot.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Stir in the coconut milk and season with salt and pepper to taste.
  6. 6. Serve hot and enjoy!
