Cauliflower and Potato Soup Recipe
A hearty and comforting vegan soup made with cauliflower and potatoes.

Main Ingredients
- 1 head Cauliflower chopped
- 2 medium Potatoes peeled and diced
- 1 medium Onion chopped
- 3 cloves Garlic minced
- 4 cups Vegetable broth
- 1 cup Coconut milk
- to taste Salt
- to taste Black pepper
1. In a large pot, sauté the onion and garlic until translucent.
2. Add the chopped cauliflower and diced potatoes to the pot.
3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
4. Use a blender to puree the soup until smooth.
5. Stir in the coconut milk and season with salt and pepper to taste.
6. Serve hot and enjoy!
