Cauliflower Chickpea Spinach Curry

Main Ingredients
- 1 medium Cauliflower chopped
- 1 can Chickpeas drained and rinsed
- 2 cups Fresh Spinach
- 1 Onion chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger minced
- 1 can Coconut Milk
- 1 can Diced Tomatoes
- 2 tablespoon Curry Powder
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- to taste Salt and Pepper
- 2 tablespoon Olive Oil
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and ginger. Sauté until onion is translucent.
Stir in curry powder, cumin, and turmeric. Cook for 1 minute.
Add cauliflower, chickpeas, coconut milk, and diced tomatoes. Stir well.
Bring to a simmer and cook for 20 minutes, until cauliflower is tender.
Add spinach and cook until wilted. Season with salt and pepper.
