Ingredients 

Main Ingredients

  • 1 medium Cauliflower chopped
  • 1 can Chickpeas drained and rinsed
  • 2 cups Fresh Spinach
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 1 can Coconut Milk
  • 1 can Diced Tomatoes
  • 2 tablespoon Curry Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • to taste Salt and Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until onion is translucent.
  3. Stir in curry powder, cumin, and turmeric. Cook for 1 minute.
  4. Add cauliflower, chickpeas, coconut milk, and diced tomatoes. Stir well.
  5. Bring to a simmer and cook for 20 minutes, until cauliflower is tender.
  6. Add spinach and cook until wilted. Season with salt and pepper.
