Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 2 large Leeks cleaned and sliced
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk full-fat
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add leeks and garlic, sauté until softened, about 5 minutes.
  3. 3. Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until cauliflower is tender.
  4. 4. Remove from heat. Use a blender to puree the soup until smooth.
  5. 5. Return soup to pot, stir in coconut milk, and season with salt and black pepper to taste. Heat through before serving.
