Cauliflower Pasta Recipe

Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 cup Vegetable Broth
  • 1 lb Pasta your choice
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
  3. While cauliflower is roasting, cook pasta according to package instructions. Drain and set aside.
  4. In a blender, combine roasted cauliflower, garlic, and vegetable broth. Blend until smooth.
  5. In a large pot, combine cooked pasta and cauliflower sauce. Heat over medium, stirring until well combined. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
