Ingredients 

Main Ingredients

  • 1 medium cauliflower, chopped
  • 2 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • ¼ cup nutritional yeast
  • ¼ cup chopped fresh parsley

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Boil cauliflower and potatoes until tender, about 10-15 minutes.
  3. Drain and mash together with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Stir in nutritional yeast and parsley.
  5. Spoon mixture into a greased muffin tin.
  6. Bake for 20 minutes or until golden brown.
