Cauliflower Potato Puff Recipe

Main Ingredients
- 1 medium cauliflower, chopped
- 2 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- ¼ cup nutritional yeast
- ¼ cup chopped fresh parsley
Preheat oven to 400°F (200°C).
Boil cauliflower and potatoes until tender, about 10-15 minutes.
Drain and mash together with olive oil, garlic powder, onion powder, salt, and pepper.
Stir in nutritional yeast and parsley.
Spoon mixture into a greased muffin tin.
Bake for 20 minutes or until golden brown.
