Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 clove Garlic minced
  • 1 cup Vegetable Broth
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
  3. 3. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1 minute.
  4. 4. Add the chickpeas, cumin, and paprika to the saucepan. Cook for 5-7 minutes, stirring occasionally.
  5. 5. Once the cauliflower is roasted, transfer it to a blender. Add the vegetable broth and blend until smooth. Season with salt and pepper to taste.
  6. 6. Serve the cauliflower puree topped with the spiced chickpeas. Enjoy!
