Ingredients 

Main Ingredients

  • 4 bell peppers
  • 1 medium cauliflower head
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup black beans, cooked
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. Pulse cauliflower in a food processor until it resembles rice.
  4. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant.
  5. Add cauliflower rice, diced tomatoes, black beans, cumin, paprika, salt, and pepper. Cook for 5-7 minutes.
  6. Stuff bell peppers with the cauliflower mixture.
  7. Place stuffed peppers on a baking sheet and bake for 25-30 minutes.
