  • 1 medium cauliflower grated into rice-sized pieces
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper red bell pepper diced
  • 1 avocado avocado sliced
  • ¼ cup fresh cilantro chopped
  • 1 lime juice of
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add grated cauliflower and cook for 5-7 minutes, until tender.
  3. In a large bowl, combine cooked cauliflower rice, black beans, corn, and red bell pepper.
  4. Top with avocado slices and chopped cilantro.
  5. Squeeze lime juice over the top and season with salt and pepper.
