Cauliflower Rice Risotto
A delicious and healthy vegan risotto made with cauliflower rice.

Main Ingredients
- 1 head Cauliflower riced
- 1 cup Vegetable broth
- 1 cup Almond milk unsweetened
- 1 tablespoon Olive oil
- 1 small Onion diced
- 2 cloves Garlic minced
- 1 cup Frozen peas
- 1 tablespoon Nutritional yeast
- to taste Salt and pepper
1. Heat olive oil in a large pan over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Stir in the riced cauliflower and cook for 5 minutes.
5. Add vegetable broth and almond milk, stirring well. Cook for 10 minutes, stirring occasionally.
6. Stir in frozen peas and nutritional yeast. Cook for another 5 minutes.
7. Season with salt and pepper to taste. Serve hot.
