Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and garlic, sauté until soft.
  3. 3. Add chopped cauliflower and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes, until cauliflower is tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Stir in coconut milk, season with salt and pepper to taste.
  7. 7. Serve hot and enjoy!
