Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until soft.
3. Add chopped cauliflower and vegetable broth. Bring to a boil.
4. Reduce heat and simmer for 20 minutes, until cauliflower is tender.
5. Use a blender to puree the soup until smooth.
6. Stir in coconut milk, season with salt and pepper to taste.
7. Serve hot and enjoy!
