Ingredients 

Main Ingredients

  • 1 medium cauliflower cut into florets
  • 2 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1 avocado sliced
  • 0.25 cup chopped cilantro
  • Lime wedges for serving

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly crispy.
  4. Warm tortillas in a dry skillet over medium heat.
  5. Assemble tacos by placing roasted cauliflower on tortillas, then topping with shredded cabbage, avocado slices, and chopped cilantro.
  6. Serve with lime wedges.
