Main Ingredients
- 1 medium cauliflower cut into florets
- 2 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 0.5 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded red cabbage
- 1 avocado sliced
- 0.25 cup chopped cilantro
- Lime wedges for serving
Preheat oven to 400°F (200°C).
Toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly crispy.
Warm tortillas in a dry skillet over medium heat.
Assemble tacos by placing roasted cauliflower on tortillas, then topping with shredded cabbage, avocado slices, and chopped cilantro.
Serve with lime wedges.
