Instructions
Preheat oven to 400°F (200°C).
In a mixing bowl, toss cauliflower florets with olive oil, smoked paprika, garlic powder, and cumin.
Spread cauliflower on a baking sheet and roast for 25 minutes, until golden and tender.
Warm tortillas in a dry skillet over medium heat.
Assemble wraps by placing roasted cauliflower, lettuce, tomatoes, and avocado on each tortilla. Roll up and serve.
