Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 1 bunch Chard chopped
  • 200 grams Mushrooms sliced
  • 1 small Onion diced
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth warm
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent.
  2. 2. Add minced garlic and sliced mushrooms. Cook until mushrooms are tender.
  3. 3. Stir in the Arborio rice and cook for a couple of minutes until slightly toasted.
  4. 4. Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more broth.
  5. 5. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
  6. 6. Stir in the chopped chard and cook until wilted. Season with salt and pepper to taste.
  7. 7. Serve hot and enjoy!
