Ingredients 

Main Ingredients

  • 1 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 teaspoon Mirin
  • ½ cup Silken tofu blended until smooth
  • ¼ cup Mushrooms sliced
  • ¼ cup Spinach chopped

Instructions 

  1. 1. In a bowl, mix vegetable broth, soy sauce, and mirin.
  2. 2. Add blended silken tofu to the broth mixture and whisk until smooth.
  3. 3. Divide mushrooms and spinach between two small bowls or ramekins.
  4. 4. Pour the tofu mixture over the vegetables in each bowl.
  5. 5. Steam the bowls for about 20 minutes or until the mixture is set.
  6. 6. Serve warm.
