Cheeseburger Soup
A hearty and creamy vegan soup that tastes just like a cheeseburger.

Main Ingredients
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 2 cloves Garlic, minced
- 2 cups Vegetable broth
- 1 cup Coconut milk
- 1 cup Vegan cheddar cheese, shredded
- 1 cup Potatoes, diced
- 1 cup TVP (Textured Vegetable Protein)
- 1 tablespoon Olive oil
- to taste Salt and pepper
1. Heat olive oil in a large pot over medium heat. Add diced carrots, celery, and onion. Cook until softened, about 5-7 minutes.
2. Add minced garlic and cook for another minute.
3. Stir in the diced potatoes and TVP. Cook for another 5 minutes.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until potatoes are tender.
5. Stir in the coconut milk and vegan cheddar cheese. Cook until cheese is melted and soup is creamy.
6. Season with salt and pepper to taste. Serve hot.
