Main Ingredients
- 2 large zucchinis sliced
- 1 cup vegan cheese shredded
- ½ cup breadcrumbs
- ¼ cup nutritional yeast
- 2 cloves garlic minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
In a large bowl, combine sliced zucchinis, olive oil, minced garlic, salt, and pepper.
Layer half of the zucchini slices in a baking dish.
Sprinkle half of the vegan cheese and nutritional yeast over the zucchini.
Add the remaining zucchini slices on top.
Sprinkle the remaining vegan cheese, nutritional yeast, and breadcrumbs.
Bake for 30 minutes or until the top is golden brown and the zucchinis are tender.
