Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 1.5 cup Water
  • 1 pint Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Fresh Parsley chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Bring water to a boil in a saucepan. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. 2. Fluff couscous with a fork and transfer to a mixing bowl.
  3. 3. Add cherry tomatoes, cucumber, red onion, and parsley to the couscous.
  4. 4. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for later.
