Chestnut Lentils and Vegetable Stew Recipe

Main Ingredients
- 1 cup lentils
- 1 cup cooked chestnuts
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoon olive oil
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook until softened.
Add garlic and cook for another minute.
Stir in lentils, chestnuts, diced tomatoes, vegetable broth, thyme, and rosemary.
Bring to a boil, then reduce heat and simmer for 45 minutes.
Season with salt and pepper to taste.
