Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the melted coconut oil, brown sugar, and white sugar. Mix well.
Add the vanilla extract and mix again.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the rolled oats and vegan chocolate chips.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes, or until the edges are golden brown.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
