Ingredients 

Main Ingredients

  • 4 large zucchinis
  • 1 cup vegan chicken strips, chopped
  • 1 cup vegan Alfredo sauce
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup nutritional yeast
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. Brush zucchinis with olive oil and season with salt and pepper.
  4. Bake zucchinis for 15 minutes.
  5. In a pan, cook vegan chicken strips until golden brown.
  6. Mix vegan chicken with Alfredo sauce and cherry tomatoes.
  7. Fill zucchini boats with the mixture.
  8. Sprinkle nutritional yeast on top.
  9. Bake for another 10 minutes.
  10. Garnish with fresh parsley before serving.
